This is the first upload of my channel, Shot on a Gopro Hero 3, it is really testing the waters of how I prefer to edit and shoot my videos, while i am waiting for a proper camera to arrive in the mail. I would really like to use youtube as a way to unwind and relax and i hope the videos reflect the process. This is a very nice Victorinox Fibrox series boning knife that i have used to carve many steaks with and to prepare many briskets and pichannias for smoking and grilling. Boning knives are the bane of any sharpener, both guided and freehand. The slight flex is easy enough to deal with, but the recurve and bolster portion of the blade is the stuff of nightmares on a sharpness and aesthetic level. What we have come to do on these kinds of boning knives is to use the 2x72 belt grinder with a 120 grit belt with a 2" contact wheel. The wheel's curvature allows us to sharpen the inner diameter of the recurve evenly. We then use a shaped 1K naniwa Chocolate Bar sharpening stone to remove any burr buildup from the belt, followed by a buff with compound. The end result is a sharpened inner curve, or recurve that can be utilized in making longer cuts, where it acts like a mounted calvary's saber, slicing its way through muscle and sinew, with the straight edge being able to nimbly work around the round parts of the bone sockets. Find the exact angle and rub the knife edge along the stone with slight pressure until both sides of the knife have grind angles that match up in the middle creating a burr then switch to smoother stones to polish out the marks left by the softer stones.

The Biggest Beginner Knife Sharpening Mistake. Knife sharpening doesn't have to be hard or time consuming. This will significantly shorten you sharpening time. 🤍 Ok, so you have realised you need to sharpen your fillet knife, knowing that you need to sharpen your knife is 90% of the problem with all knives, but especially fillet knives. Anglers think that because they have sharpened their fillet knife at the start of the season it will remain sharp, not so. You should never try to fillet a fish without first sharpening your knife. It is like everything, there is a technique to doing it, and once you have mastered how to sharpen a fillet knife you will not even have to think about it, it will be second nature. Sharpening a kitchen knife sharpening on my Tormek T-8, with the tomato and paper trick! Here I take another kitchen knife and give it some really nasty beatings.. It's 10 years old and has been discarded many years ago. So why not?! Filming this took 1-2 hours but this can easily be done in about 5-10 minutes.. Or less if you stick with the SG-250 stone. There's a lot of comments about sharpening knives on the Tormek T8 vs. flat stones. Some people prefer flat stones over a Tormek and of course.. I would do the same, if you only need to sharpen a couple of knives or one. But when you sharpen 20, 50 or even 100 at the time, this machine can't be beaten by flat stones. I use this for almost all my sharpening: axes, knives, gouges, turning tools etc. And of course for customers: scissors, kitchenknives etc. ASMR for the people! 🤍 🤍
